Happy Monday, everyone! I hope you all had a wonderful weekend.
Building off of my last entry, I’ve been thinking a lot about others lately.
This sprouted from a prayer, actually. I was praying, and I was asking God for many things pertaining to…
I suddenly realized this, and was at once ashamed. Should I have been ashamed? I mean, what’s God for if he’s not to take a load off of us?
That’s just it; he’s here for that- but he’s not just here for me; he’s not just here for those of you whom are reading this blog.
He’s here for the persecuted. The tired, the sick, the hungry. The poor, the oppressed, the lost.
He doesn’t love them any more than he loves you or me, but he doesn’t love us more, either.
Spend a little more time thinking about the troubles of others, and I promise you that your problems will seem…
hmm… as shrimpy as a grain of salt.
Walnut Oat Streusel (on Sweet Potato Muffins)
I went through a walnut… fetish, if you will, and I’ve been trying to come up with ways to use up large bag I
wandered upon purchased. This was a winner! I used is streusel to top a package of sweet potato muffins (yum!). I would have made my own, but I’m trying to declutter my pantry of pre-packaged baked goods, so… yeah.
Walnut Oat Streusel
tops 12 muffins
2 tablespoons chopped walnuts
2 tablespoons oats (any old kind will do)
1 tablespoon brown sugar
1 tablespoon light butter (Brummel & Brown is great!)
1. Roughly chop walnuts into even finer pieces.
2. Combine all ingredients, and for best results combine with fingers.
3. Once combined, top muffins with the streusel and bake according to muffin time.
Simple and delicious- that’s how I like it! Enjoy!
