Meet your new best friend.
After reading this blog, you’ve probably made a few new best friends, huh?
Fan of feta?
And if you love it even a teensy bit as much as I do…
You’ll never stop eating it.
On these tostadas, on burgers, on chips, alone…
You catch my drift.
And it takes two ingredients! Two!
Pulse some crumbled feta and room-temp cream cheese in your
food processor, and all your problems are solved.
Then, if you’re smart, you make these:
Chicken and Corn Tostadas. Fresh times, like, a million.
It’s like your favorite salad.
On a toasted tortilla.
With whipped feta.
I also realize that I’ve used corn in almost every single
dinner recipe this summer.
I do realize it.
And I’m not ashamed at all.
Perhaps I should be.
But sweet corn… it’s only in-season for so long. So that means use it
in everything, right?
Kind of like blueberries.
Blueberries. 99 cents a pint at my Kroger this week.
Guess who bought 8 pints.
It’s basically summer on a plate.
And I love summer, don’t you?
It’s times like these where I don’t make sense.
And I don’t have to.
I’ll stop now and explain how to make these before you get sick of me.
First, you’ll toast some tortillas (corn or flour) in the oven.
Slather (I mean it) on some of that whipped feta.
Add some chicken and veggies of your choice (this means CORN and I don’t know how it didn’t make it into the picture… oops.)
Sprinkle on some crumbled feta to finish it off…
Versatile. Fast, Fresh, Easy.
Could you really ask for more?
Whipped Feta and Chicken Tostadas
inspired by How Sweet Eats
makes 2 tostadas
1/2 cup feta
1 1/2 tablespoons cream cheese, room temperature
1. Pulse ingredients in a food processor for 2-3 minutes until whipped and completely combined. You’ll have plenty of leftovers for other recipes.
2 tortillas, flour or corn
olive oil cooking spray
1 small chicken breast, cooked (I used rotisserie – perfect!)
1 ear of corn
1/4 small cucumber
1/2 small tomato
green onions, optional
fresh dill, optional
whipped feta (not optional :) )
1. Preheat the oven to 400 degrees. Spray tortillas on both sides with cooking spray and toast on a baking sheet for 8 minutes.
2. Spread some whipped feta on a toasted tortilla. Top with chicken, corn, veggies, and feta. Eat.
Salad’s never tasted better.
